BUCKINGHAM'S new fishmonger and restaurant opened its doors for the first time on Friday (02/05).
Halibut, which is based in the former Aylesbury Vale District Council offices in Cornwall Place, has been launched by Buckingham residents Zakima Goldsmith and Sam Omotayo, who have operated other eating places in London.
Halibut also includes a traiteur, a continental counter that sells cold meats, salads and seafood dishes to take away.
As well as the staples such as salmon and tuna, the fish counter will sell different fish each day, depending on what has been caught that morning.
Mrs Goldsmith said: "We have various fresh fish suppliers, from Billingsgate Fish Market in London, as well as Cornwall and Devon. Much of what we offer is seasonal so it depends on what the fishermen catch that day.
"Fish like scallops are seasonal and plaice has just come back from breeding, but the staples will be here all the time."
She added they had received a lot of support from the public and the restaurant was booked up for the opening weekend.
She said: "Everyone has high expectations for us. We are eager to serve simply because we have had such a great response."
The fishmonger opens at 9am, with the restaurant open from midday to 3pm for lunch, and from 6pm to 10pm for dinner each day.
